Egg & Avocado Chutney Sandwich

Looking to elevate your Breakfast Avocado Toast– look no further. Try my Avocado egg chutney Sandwich, the operative word being Chutney, my favorite condiment of all time – Pudina Chutney. It is an addictively delicious hot sauce from India that will change your world. There are many tweaks to this chutney/sauce, this is the one we love. This recipe is my go-to avocado egg breakfast sandwich. It’s filling, it’s quick, it’s easy, and most importantly – it’s packed with flavor.

How To Make a Chutney Sandwich

  • Toast the bread – toasting your will make the bread crispy, but also add another layer of rich texture. Toast before spreading then chutney.
  • Cover the pan with a lid when you are cooking your eggs – this helps the whites of the eggs cook all the way through while keeping the egg yolk runny, if you like slightly runny eggs.
  • Mash the avocado – Smashed avocado gives a richly superior texture and flavor for these kinds of sandwiches, you also get a little avocado with every bite this way.

Ingredients
  

  • 2-3 slices wholegrain rustic bread or bread of your choice
  • 2-3 fresh eggs
  • 1 medium avocado, peeled pitted and smashed
  • 2-3 tbsp pudina chutney

Instructions
 

  • Toast your bread in a toaster or on a hot skillet.
  • Spread a thin layer of pudding chutney. Top it with smashed avocado.
  • Cook eggs to your desired method, scrambled, fried, poached works the best. Top the toast with cooked eggs and serve.
