This is a staple condiment for every Indian snack or meal. Packed with fresh flavors of mint, cilantro, lime juice, chillies it enhances favorite Indian snacks like samosa, fried foods, chaats, kebabs and everywhere you need to perk up a meal.
This recipe is freestyle add or reduce the quantity to your own taste.n
PUDINA CHUTNEY
For the mint chutney
2-3 tablespoons, silken tofu or plain yogurt
3-4 tablespoons lemon juice
1 bunch cilantro, leaves and tender stem
1 cup loosely packed mint leaves only,
1 jalapeño or green chilies to your heat level
2 teaspoons grated ginger
1 fat date or 2 tablespoons raisins or 1/2 teaspoon sweetener of your choice to balance the flavor
¼ teaspoon kosher salt,
1 tablespoon water or just enough to blend
Place all the ingredient in a high-speed food processor. Blend all ingredients until smooth. Taste and adjust seasoning and lemon juice as needed.
