Avocado Scrambled Egg Toast

It feels like we’ve been eating a lot of eggs lately in so many different ways. The more I work with them the more recipe ideas pop in my head to use them in different ways. Eggs are a powerhouse of nutrition and protein, they’re so easy to prepare and simply delicious. This is one of my all-time favorite breakfasts, lunches, quick dinners or even a hearty snack. It’s tasty and savory, creamy, filling and a great high-protein, quality fat+power packed option for when you need something quick and easy. 

Avocado Scrambled Egg Toast

Ingredients
  

  • 2 slices wholegrain toast
  • 2 eggs
  • 1 medium ripe avocado
  • 2-3 radishes, sliced
  • small handful of micro greens
  • sea salt and black pepper
  • 1 tbsp olive oil or butter

Instructions
 

  • Toast your bread to your level of doneness. Scoop and mash the avocado. Spread a thick layer of avocado on the toast.
  • Warm a frying pan with a little oil. While the pan warms, crack the eggs and small bowl, whisk and season. Pour the eggs and scramble until its set.
  • Place the eggs evenly on the avocado toasts. Garnish with sliced radishes, micro greens salt and pepper as needed. Enjoy!!
