Matar Pulao~ Spiced Peas and Rice

Want to elevate your next Indian meal, try this simple, super delicious peas and rice instead of plain rice. It will transform your everyday, weeknight or weekend meal into a party meal without much effort.

Plain basmati rice is great, but sometimes I like to elevate our meal by making this Peas Pulao. It pairs with so many dishes, here are some of our my favorite:

  • Gobi Matar Korma
  • Tomato Dal
  • Chana Palak
  • Punjabi Rajma
  • Kadhi Pakodi
  • Chicken Curry with Spinach
  • Chicken Tikka Masala
  • Methi Dal
  • Puy Lentil Stew
  • Matar Paneer

Serve alongside with some plain yogurt or raita it makes a wonderful satisfying meal. So easy and tasty! Honestly, you can serve this pea pulao with any meal instead of plain basmati rice.

Ingredients

  • Rice: Basmati is my best choice
  • Peas: frozen works just fine, no need to defrost. For one cup of rice use up to 11/2 cups of peas.
  • Onion: dice them.
  • Spices: we will use a combination of whole cumin, green cardamom, cinnamon sticks and cloves.
  • Water or Veggie Broth: adjust the salt if using broth. water works just fine too.

Ingredients
  

  • 1 cup basmati rice rinsed until water runs clear
  • 1 cup peas, freshly shelled or frozen use up to 1½ cups peas if you like
  • 1 bay leaf
  • 4 whole green cardamom cracked
  • 1 tsp cumin seeds
  • 2-3 pieces 1 inch long cinnamon sticks
  • 2-3 cloves
  • 1-2 tbsp ghee or any neutral oil
  • 1 medium yellow onion, chopped
  • 1¼ cups water or veggie broth adjust the salt if using broth
  • salt as needed

Instructions
 

  • Rinse the basmati until water runs clear'ish. About 2-3 times. Soak the basmati rice in cold water for 15-30 minutes. Drain and set aside.
  • Heat ghee or oil a sauce pan for minute. Add the cumin seeds and once they begin to toast, add the cardamom, cloves, bay leaf and cinnamon sticks. Stir for 30 seconds, and add the diced onions. Saute for 5-7 minutes, or until the onion begins to brown.
  • Add the rice, peas, water and salt. Mix well.
  • Cover and bring the water up to a boil. Then drop to the lowest heat and cook undisturbed for 8-10 minutes. (Check the instructions for cooking times)
  • Take it off the heat and leave to rest for 10 minutes without opening the lid. Open the lid, fluff the rice and enjoy!!!
