Ingredients
  

  • 1 cup basmati rice rinsed until water runs clear
  • 1 cup peas, freshly shelled or frozen use up to 1½ cups peas if you like
  • 1 bay leaf
  • 4 whole green cardamom cracked
  • 1 tsp cumin seeds
  • 2-3 pieces 1 inch long cinnamon sticks
  • 2-3 cloves
  • 1-2 tbsp ghee or any neutral oil
  • 1 medium yellow onion, chopped
  • cups water or veggie broth adjust the salt if using broth
  • salt as needed

Instructions
 

  • Rinse the basmati until water runs clear'ish. About 2-3 times. Soak the basmati rice in cold water for 15-30 minutes. Drain and set aside.
  • Heat ghee or oil a sauce pan for minute. Add the cumin seeds and once they begin to toast, add the cardamom, cloves, bay leaf and cinnamon sticks. Stir for 30 seconds, and add the diced onions. Saute for 5-7 minutes, or until the onion begins to brown.
  • Add the rice, peas, water and salt. Mix well.
  • Cover and bring the water up to a boil. Then drop to the lowest heat and cook undisturbed for 8-10 minutes. (Check the instructions for cooking times)
  • Take it off the heat and leave to rest for 10 minutes without opening the lid. Open the lid, fluff the rice and enjoy!!!
