Nordic Inspired Cabbage Salad

Inspired by my trip to Copenhagen this is one of my favorite way to eat cabbage and beets. Crunchy slightly sweet, brightly colored, this salad is not only stunning to look at, but super delicious and not to mention packed with awesome nutrients. Copenhagen has some of the best eateries to suit every budget, One of our favorite places was the TorvehallerneKBH Public food market, with artisanal stores, fancy coffee shops, high quality restaurants each specializing in certain menus, there’s a ton of places to choose from. We ate at this market a few times, our favorites included porridge at Grod, lunches at Hallernes Smørrebrød and seafood/salad platter at Hav2Go(highly recommended), Pizzas, coffee at several different places and each of super fresh and delicious. And to close out your meal there are super yummy pastry and cake shops to chose from.

If you’re in a mood to cook your own there’s also a lovely farmers market outside to pick your fruits and veggies. Many of the indoor shops also sell ingredients, pantry items like grains, legumes, olives, oils, spices and fresh stuff like breads, pastas, fresh meats, eggs, super fresh fish. Perfect if you’re in an Airbnb and want o make your own food, Denmark is expensive, but with very high quality ingredients its worth making your own if you have access to a kitchen.

I had this salad practically everyday and fell in love. It had to be recreated. (pictured above on the left). The name of the salad was only mentioned as Red Cabbage Salad! that was not a whole lot of information for me to recreate it, in addition to that the entire salad with just one color, which is absolutely gorgeous but not much information at first glance. However, I ate it so many times I kinda figured out the ingredients. I think this recipe has come pretty close to what I ate in Copenhagen.

I now make this slaw on repeat for dinners, BBQ’s, ideal for potlucks to share(travels really well). It goes really well with grilled chicken, salmon or meats, as a mezze and of course awesome on its own. Its one salad we have put it on repeat on a regular basis and we love it. I recently took it to a baby shower and literally everybody asked of the recipe, so thought it would be easier I send everyone to this blog post. Nordic Cabbage Salad

Crunchy, veggie packed, this vibrant monocromatic magenta salad is so delicious and stunning to look at, it is the new winter salad to lift your mood while providing tons of nutrients.

Equipment

  • Sharp Knife
  • large bowl

Ingredients
  

  • ½ medium red cabbage, shredded thinly
  • 1 large Granny Smith apple or your favorite apple diced into small cubes
  • 2 medium red beets, steamed or roasted diced into small cubes
  • ½ medium red onion, thinly sliced and petals separated
  • 3-4 celery sticks, chopped save a few fronds for garnish

Dressing

  • 1 medium lemon, about ½ cup juice
  • 2 tbsp e. v olive oil
  • 2 tbsp Greek yogurt
  • 1 tbsp good quality Mayo
  • 1 tbsp Dijon mustard
  • 1 tbsp honey or maple syrup good quality
  • salt and pepper to taste

Instructions
 

Dressing

  • Save half the lemon juice then combine the rest of the lemon juice with all other ingredients (in the dressing) into a jar or small bowl. Stir until fully combined and smooth. 

Salad

  • Add all the prepared veggies to a large bowl, except the beets
  • Add the remains lemon juice to the veggies, using your clean hands gently combine and massage the veggies. This breakdown their cell wall to soften and make it more pliable to eat. Add the beets, stir until fully combined. 
  • Add the dressing, combine and allow it to rest for 30 minutes before eating. Enjoy!!
