Nordic Cabbage Salad

Equipment

  • Sharp Knife
  • large bowl

Ingredients
  

  • ½ medium red cabbage, shredded thinly
  • 1 large Granny Smith apple or your favorite apple diced into small cubes
  • 2 medium red beets, steamed or roasted diced into small cubes
  • ½ medium red onion, thinly sliced and petals separated
  • 3-4 celery sticks, chopped save a few fronds for garnish

Dressing

  • 1 medium lemon, about ½ cup juice
  • 2 tbsp e. v olive oil
  • 2 tbsp Greek yogurt
  • 1 tbsp good quality Mayo
  • 1 tbsp Dijon mustard
  • 1 tbsp honey or maple syrup good quality
  • salt and pepper to taste

Instructions
 

Dressing

  • Save half the lemon juice then combine the rest of the lemon juice with all other ingredients (in the dressing) into a jar or small bowl. Stir until fully combined and smooth. 

Salad

  • Add all the prepared veggies to a large bowl, except the beets
  • Add the remains lemon juice to the veggies, using your clean hands gently combine and massage the veggies. This breakdown their cell wall to soften and make it more pliable to eat. Add the beets, stir until fully combined. 
  • Add the dressing, combine and allow it to rest for 30 minutes before eating. Enjoy!!
