Persimmon Toast with Apple Butter and Cherve

Ingredients
  

  • 4 slices whole grain sourdough bread
  • 2 fresh persimmon
  • 4-5 tbsp apple butter or as needed
  • 6-8 oz chèvre goat cheese or goat/cottage cheese, burrata
  • 2 sprigs fresh thyme
  • black pepper as needed
  • flaky salt as needed chèvre is a salty cheese so adjust accordingly

Instructions
 

  • Thinly slice the persimmon. Set aside
  • Toast the bread to desired crisp and golden’ness
  • Add 1-2 ounces of chèvre cheese on each toast and thinly spread evenly.
  • Spread a thin layer of apple butter on the cheese layer.
  • Top with persimmon slices, thyme leaves, black pepper and if needed flaky salt.
  • Drizzle a thin flight of e.v olive oil if desired. Enjoy!
    Makes 4 yummy toasts.

Notes

If Cherve cheese is not available other good choices are regular goat cheese, cottage cheese, burrata.
