Persimmon Toast with Apple Butter and Cherve

whole grain sourdough bread

fresh
persimmon

tbsp
apple butter or as needed

chèvre goat cheese or
goat/cottage cheese, burrata
2
sprigs
fresh thyme
black pepper as needed
flaky salt as needed
chèvre is a salty cheese so adjust accordingly
Instructions
Thinly slice the persimmon. Set aside
Toast the bread to desired crisp and golden’ness
Add 1-2 ounces of chèvre cheese on each toast and thinly spread evenly.
Spread a thin layer of apple butter on the cheese layer.
Top with persimmon slices, thyme leaves, black pepper and if needed flaky salt.
Drizzle a thin flight of e.v olive oil if desired. Enjoy!
Makes 4 yummy toasts.
Notes
If Cherve cheese is not available other good choices are regular goat cheese, cottage cheese, burrata.
