

I love fruity toasts with herby-cheesy-savory flavors more than anything, and this Persimmon Apple Butter Cherve Toast is one of those perfect-sweet-savory toast recipes. It’s just your normal toast, but it has an extra layers of crunch, creamy jammy goodness flavor that is delicious beyond words. It makes this toast a total flavor bomb, but also a treat. And I rarely use the word treat, because treats have to be very warranted, but this toast fits the bill.
This toast earns the title of delicious and wholesome because it combines all of my favorite things – pan-crusted toast, creamy-salty cherve (goat) cheese, fresh juicy-crispy persimmon slices, thyme leaves and homemade apple butter pumpkin butter is a decipus option if apple butter is hard to find. Make it for your next brunch and watch as the compliments roll in. People will say it’s a treat too!


Ingredients
- Fresh Persimmon
- Cherve similar to goat cheese or use feta
- Fresh Thyme
- Extra Virgin olive oil
- Apple Butter my homemade recipe is linked. Or substitute with pumpkin butter


Persimmon Toast with Apple Butter and Cherve



Equipment
- Toaster
Ingredients
- 4 slices whole grain sourdough bread
- 2 fresh persimmon
- 4-5 tbsp apple butter or as needed
- 6-8 oz chèvre goat cheese or goat/cottage cheese, burrata
- 2 sprigs fresh thyme
- black pepper as needed
- flaky salt as needed chèvre is a salty cheese so adjust accordingly
Instructions
- Thinly slice the persimmon. Set aside
- Toast the bread to desired crisp and golden’ness
- Add 1-2 ounces of chèvre cheese on each toast and thinly spread evenly.
- Spread a thin layer of apple butter on the cheese layer.
- Top with persimmon slices, thyme leaves, black pepper and if needed flaky salt.
- Drizzle a thin flight of e.v olive oil if desired. Enjoy!Makes 4 yummy toasts.
