Slice the banana, then place the slices in a freezer safe bowl or jar. Freeze the fruit overnight in the freezer.
In a jar or bowl stir the chia seeds with half the milk and place it in the fridge overnight.
The next morning, add the chia mixture, frozen berries, frozen banana, lemon zest, ginger and the remaining milk to a food processor. Process until smooth. Transfer to a bowl. Add toppings as needed. Eat right away.
