
I make one of these treats for travel, long car rides and as healthy treat for kids. These nutty snack balls are so good we blow through a batch fast. The recipe is very versatile so a few swaps and you’ll have a totally different flavor combination. Swap dried figs or apricot with dates, skip the chocolate and bump up the hemp seeds or nuts, it really does make these special and so delicious every time.
They can go in lunch boxes or as a healthy travel snacks or a sweet treat at coffee time. We like them best cold from the fridge, as the nut butter/coconut oil makes them a little creamy when chilled. Rolling in ground pistachio is for contrast and aesthetics, the pistachio topping can be left out and its still very good.




Pistachio Cacao Snack Bites

Equipment
- Food Processor
Ingredients
- 1 cup pistachio/150 gms save about 2 tablespoons for rolling
- 6-8 fat mejdool dates(soak in hot water if they hard or dry)
- 1 tsp vanilla extract
- 2 heaping tbsp good quality cacao
- 2 tbsp hemp seeds
- 2-3 tbsp almond butter or tahini
- pinch of flaky seal salt(optional)
Instructions
- In a food processor pulse the pistachio nuts a few times until roughly ground. Transfer most of it to a small bowl leaving behind about 2 tbsp in the processor. Grind the remaining pistachio to a somewhat fine powder and transfer this into a plate.
- Now add the roughly crushed pistachio back to the food processor, add vanilla, softened dates, salt, cacao, hemp seeds, nut butter or tahini and process until it turns into a soft dough.
- Take about one tablespoon dough and roll into small balls. Now take each ball and gently roll them in the ground pistachio pressing lightly. Chill and store in a covered container refrigerated for up to a week.
