I used to struggle with a good side dish/salad to pair with homemade pizza dinners. Something fresh and healthy yet that works with cheesy pizza. I saw this beautiful salad on “The Modern Proper”blog. We love arugula so I made this salad to pair with our pasta dinner which was great, but somehow I felt it works well with Pizzas, perhaps its the peppery arugula that balances the cheese, and everybody loved it. Yes there is a little parm in the salad and that’s to add some depth of flavor(umami) and olive because I love them and the briny flavor cuts the cheesiness of the pizza.
The pine nuts add a buttery goodness, again to balance the peppery arugula, the quantity can be cut back if you want it lighter. To bring it all together a lovely shallot Vinaigrette is perfect. Serve this salad with Pizza, pasta, roast chicken dinners, it’s so good!




Easy Arugula Salad


Equipment
- Large serving bowl
Ingredients
- 6-7 cups fresh Arugula about 7-8 oz
- 2 tbsp pine nuts toasted pumpkin seeds works well too
- ¼ cup shaved parmesan cheese
- 6 green olives(optional) sliced
- 2 tbsp minced shallot
- ⅓ cup white wine vinegar
- 2 tsp honey
- 2 tbsp extra virgin olive oil
- ½ tsp sea salt
- 1 tbsp grainy mustard
- 1 tbsp mayonaise (optional)
Instructions
- In a large serving bowl, mix the arugula, olive slices and Parmesan.
- Warm a small skillet on medium heat and add the pine nuts, and toast them stirring constantly( they burn very quickly). Once they're toasty and aromatic turn off the heat. Transfer and let them cool.
- In a lidded jar or small bowl blend the ingredients for the shallot vinaigrette. Once well emulsified let it rest for a few minutes.
- Once ready to serve, pour the desired amount of dressing over the arugula, toss lightly. Top it with pine nuts and serve.
