Jalapeño Coleslaw

This classic cabbage slaw is a perfect accompaniment to all your summer barbecues, tacos, sandwiches, grilled meats and everything in between. It’s simple easy to whip up and makes an excellent side dish without a ton of mayo. Its a classic mix of green cabbage, red/purple cabbage, shredded carrots, a few slices of jalapeño for heat and a creamy dressing that brings everything together.

Prep Time 10 minutes mins
Course Salad, Side Dish
Servings 6

Ingredients

  • 3-4 cups shredded green cabbage*** see notes
  • 2 cups shredded purple cabbage
  • 1 cup carrot, shredded
  • 1 jalapeño, sliced
  • 2 tbsp chopped cilantro
  • 2-3 tbsp apple cider vinegar
  • ½ tsp honey or maple syrup for balance
  • 2 tbsp mayo add more for extra richness
  • ½ cup greek yogurt
  • 1 tbsp lime juice
  • 2-4 tsp sriracha sauce use to your heat tolerance
  • ⅓ tsp sea salt
  • ¼ tsp freshly cracked black pepper

Instructions

  • In a large salad bowl combine mayo, yogurt, vinegar, honey, sriracha, lime juice, salt and pepper. Whisk until smooth.
  • Add the shredded veggies, jalapeño and cilantro. Toss the veggies until well combined with the sauce. Taste and adjust to suit your taste. Wait for about 5 minutes before you feel the need to add more mayo, the cabbage will soften a little. If you still feel it needs more richness add a little more mayo. Serve!

Notes

If you’re not up to shredding cabbages and carrot, buy a bag of coleslaw premix about 17-18 oz. It works just fine.
