Spicy Jalapeno Slaw

Ingredients
- 3-4 cups shredded green cabbage*** see notes
- 2 cups shredded purple cabbage
- 1 cup carrot, shredded
- 1 jalapeño, sliced
- 2 tbsp chopped cilantro
- 2-3 tbsp apple cider vinegar
- ½ tsp honey or maple syrup for balance
- 2 tbsp mayo add more for extra richness
- ½ cup greek yogurt
- 1 tbsp lime juice
- 2-4 tsp sriracha sauce use to your heat tolerance
- ⅓ tsp sea salt
- ¼ tsp freshly cracked black pepper
Instructions
- In a large salad bowl combine mayo, yogurt, vinegar, honey, sriracha, lime juice, salt and pepper. Whisk until smooth.
- Add the shredded veggies, jalapeño and cilantro. Toss the veggies until well combined with the sauce. Taste and adjust to suit your taste. Wait for about 5 minutes before you feel the need to add more mayo, the cabbage will soften a little. If you still feel it needs more richness add a little more mayo. Serve!
Notes
If you’re not up to shredding cabbages and carrot, buy a bag of coleslaw premix about 17-18 oz. It works just fine.
