Strawberry Corn Salsa

Bright, vibrant and flavorful this avocado strawberry corn salsa is perfect for scooping with chips or topping your summer tacos, grilled fish or chicken. Fruit salsa are perfect combination of fruit sweetness creamy avocado, a hint of smoky roasted corn, and a kick from jalapeño/ Serrano. And it all comes together in under 15 minutes, the hardest part of this recipe is chopping some ripe strawberries, onions, avocado, an jalapeño and literally defrosting some frozen roasted corn, which is available everywhere these days in the frozen isle.

That is the kind of meal we need for summers don’t you think!

You’ll Need…

  • Strawberries
  • Roasted corn
  • Red onion
  • Avocado
  • Jalapeño
  • Cilantro
  • Lime juice
  • A pinch of sea salt

Notes for Strawberry Corn Salsa

  •  Use strawberries and avocado that are ripe but still firm. This keeps them intact longer without getting soft and mushy.
  • I like to salt right before serving to prevent the produce releasing juice and pooling at the bottom.
  • Dice your fruit into small, even pieces, so every ingredient is even in every bite. Deseed the jalapeño or Serrano and red onion into smaller pieces so one doesn’t get a big piece of strong flavor.
  • To keep avocados from browning add the lime juice. They will stay fresh longer.
  • Remove the seeds from the jalapeño, or omit the jalapeño altogether if you prefer mild salsa. On the other hand if you like your salsa with a punch of heat go for Serrano peppers.

Strawberry Corn Salsa

Ingredients
  

  • 12-14 oz ripe but firm strawberries hulled and diced
  • 2-3 tbsp red onion finely diced
  • 1 cup frozen roasted corn defrosted and patted dry
  • 1 medium avocado diced
  • 1-2 jalapeno or serrano seeded and diced into small pieces
  • ¼ cup cilantro finely chopped, use less if you're not into cilantro
  • juice from one lime about 3 tbsp or to taste
  • ¼ tsp sea salt or to taste
  • Tortilla chips to serve

Instructions
 

  • Place all ingredients in a medium bowl and mix to combine. Serve with tortilla chips for scooping.Serves approx 4-6 as an appetizer.

Notes

Alternatively serve with grilled salmon, chicken, tofu or with fish and shrimp tacos, ts fabulous.
