Summer Kale Slaw with Poppy Seed Dressing

Colorful and crunchy, this is one salad to keep in your back pocket all summer. Its versatile to pair with all your barbecues, grilled proteins, pizzas, taco toppers, burgers and everything in-between. Its tasty comes together in about 20 minutes and packed with superfood goodness.

The ingredients are simple and available in every grocery store; fresh curly kale, red and green cabbage, carrots and crunchy bits of sliced toasted almonds. The dressing has some natural sweetener from maple syrup tangy punch with lemon and creamy deliciousness from tahini. This simple, healthy recipe is vegan, paleo & dairy free and perfect for serving all summer!

This versatile kale salad is super crunchy, tasty and nutrient dense. It’s packed with tons of vitamins, minerals and antioxidants with all the cruciferous superfoods in one bowl. Make sure to massage the dressing lightly and allow the massaged salad to sit for a few minutes like 5-10 minutes. This softens the kale leaves and makes it easier to chew. All the veggies here are sturdy compared to leafy greens and softer veggies, so allowing this salad to sit in the dressing will not wilt the salad.

Ingredients

  • Veggies: I love using both red and green cabbage for extra crunch and textural interest. Then there is shredded carrots, and the piece-de-resistanće KALE. Trust me it is so good in this salad even the most fussiest will love it.
  • Almonds: toasted sliced almonds for a wonderful extra crunch with all of the veggies.
  • Tahini: creamy dreamy tahini will coat all of those gorgeous veggies and make it so addictive.
  • Dijon Mustard: for some kick.
  • Lemon: we use lemon to add that tangy delicious flavor along with a punch of vitamins + gut healthy properties.
  • Pure maple syrup: instead of using sugar we’re just using a bit of maple syrup to lightly sweeten and balance the acidity. Feel free to adjust depending on the sweetness you desire.
  • Poppy Seeds: we love the tiny seeds that add a wonder crunch and make it look pretty too.
  • Garlic powder: a little garlicky flavor makes this salad extra delicious.

Ingredients
  

Creamy Poppy Seed Dressing

  • 1 cup Poppy Seed Dressing
  • 3 cups packed shredded kale, leaves only
  • 1 cup shredded carrots
  • 1 cup packed red/purple cabbage shredded
  • 1 cup shredded green cabbage
  • ¼cup toasted sliced almonds

Instructions
 

  • Combine the shredded kale, cabbages, carrots, toasted sliced almonds in a large bowl. Toss.
  • follow the instructions for the creamy poppy seed dressing in the link (see ingredients). Drizzle as needed and toss. Allow the salad sit for a 5-10 minutes to allow the kale leaves to soften a bit before eating.
