Creamy Poppy Seed Dressing

Creamy Poppy Seed Dressing is flavorful, dairy free, light, a salad dressing or sauce that is a perfect mix of sweet, savory with nutty flavor from the tahini. It has been our favorite dressing specially for vegetables that have a bit of heft to them like kale, sweet potato, cabbages. Here’s what you’ll need to make:

Ingredients Needed

  • Tahini: is an excellent base in salad dressings because of its viscous, creamy texture, an awesome substitute for mayo. I love this tahini which has an lovely runny texture and fabulous taste, I discovered it on my last trip to Israel and fell in love with it. Luckily I found it at a local Mediterranean market way cheaper than on Amazon. I linked it on Amazon so you know what to look for.
  • Lemon juice: acid component to bring out the flavor and balance.
  • Sweetener: feel free to use honey or maple syrup depending on your diet and preference. Sugar works well too if thats what you have.
  • Dijon mustard: the tangy savory flavor of mustard really works well in this recipe, don’t skip it.
  • Poppy seeds: we love the delicate crunch and lovely flavor of poppy seeds. Plus it looks so pretty suspended in the dressing.
  • Seasonings: garlic or onion powder add some flavor. Herbs like parsley and dill work well too.
  • Water: a good idea to keep a little water to thin the dressing.

Course Salad Dressing and Vinaigrette
Cuisine American
Servings 1 cup

Equipment

  • whisk

Ingredients

  • ¼ cup heaped tahini, runny
  • ¼ cup freshly squeezed lemon juice
  • 2 tbsp honey or maple syrup
  • 1 tsp dijon mustard
  • 1 tbsp poppy seeds
  • 1 tsp garlic or onion powder herbs like dill or parsley works well optional)
  • ¼ cup water, only to use as needed
  • ½ tsp sea salt
  • ¼ tdp freshly cracked black pepper

Instructions

  • In a small bowl add together tahini, lemon juice, maple syrup/honey, dijon mustard, poppy seeds, onion powder, salt and pepper.
  • Starting with 2 tablespoons of water at a time, mix the ingredients to form a sauce like texture. Adding more water as needed so that the dressing is pourable.
  • Tahini varies in consistency so you may need more or less water depending on the type you have.

Notes

  1.  If you don’t have or need a swap try natural, creamy cashew butter. However I recommend tahini for the best flavor.
  2. To bulk and extra creaminess add plain Greek yogurt!
