Creamy Dill Sauce

We need a back up go-to sauce for our weekly salmon recipe, said my husband. The one we had in Sweden he continued, I exactly knew what he was talking about..

I normally season salmon based on the cuisine that inspires us that night, chipotle with Mexican, Zaatar with Mediterranean and of course the vegetables fresh in season, which also determines the sauce to accompany everything. Weekdays we keep things simple and lot many times its just sea salt, pepper and some lemon zest.

When I get my hands on fresh wild caught fish all it needs is sea salt, fresh black pepper and some lemon, along with a try of roast veggies or simple slaw. It is one of my all time favorite meals, simple, uncomplicated, delicious and nutritious.

Back to this sauce, my husband loves a good mustard sauce or this dill sauce. The love began early in his career when he made frequent trips to Northern Europe, he would rave about the grilled salmon and the delicious sauce it came with. So I recreated a lighter version of the classic creamy dill sauce which has become our favorite go-to salmon pairing. This a sauce is also delicious with steamed or grilled asparagus, cauliflower, broccoli and particularly with eggs Benedict, YUM!!

Ingredients

  • Dill, of course! It is dill sauce + it adds fresh, herby flavor to the creamy sauce.
  • Yogurt â€“ Classic dill sauce calls for sour cream. Instead we’re using yogurt as the base of the sauce. Use unsweetned plain regular whole or Greek yogurt! I used Greek as it has less moisture.
  • Mayonnaise â€“ For richness and body. The mayo shines through here so make sure to use a good one. I like Avocado based Mayo, there are several good brands out their, Sir Kensington’s, Primal and MNMLST are my favorite and Vegan Mayo is also good if you choose.
  • Mustard- we love the flavor of mustard with this combination, it adds body, earthiness and depth. leave it out if you’re not into mustard. Regular Dijon or horseradish both are delicious.
  • Onion powder and garlic â€“ They add sharp, savory depth of flavor. I used fresh garlic as I was out of powder. Simply grate a fat clove, it’ll do the job.
  • Fresh lemon juice â€“ For bright, zingy fresh flavor and lifts all the flavors.
  • Capers – we really love the briny bites of capers, its optional though

Creamy Dill Sauce

Ingredients
  

  • ½ cup plain greek or regular yogurt
  • ¼ cup good quality Mayo
  • 1 tbsp mustard Dijon, hot English or horseradish
  • 1 clove garlic grated or use 1 tsp garlic powder
  • ½ tsp onion powder
  • 2½ tbsp fresh dill, minced
  • 2 tbsp capers, drained optional
  • 2 tbsp fresh lemon juice
  • ¼ tsp sea salt
  • ¼-½ tsp fresh black pepper

Instructions
 

  • In a small bowl, stir together the yogurt, mayonnaise, mustard, capers, lemon juice, garlic, onion powder, and dill. Cover and refrigerate until ready to use.
  • Feel free to adjust any ingredient to suit your taste, Use this recipe as a basic template. Add or subtract anything you like or dislike. But keep the dill and lemon juice.
