Pear Walnut Salad with Greens and Cheesy Tahini Sauce

If you’re looking for a palate cleansing, nourishing yet satiating salad look no further. This time of the year, food can get very calorie dense, sugary and easy to derail from usual healthy eating at least for me. I’m all for treats during the holiday and indulge in my share of baked goodies, drinks and rich food. Thats why I sneak in a large salad or tray of roast veggies into our diets. I find eating a zesty salad can balance the meals and provide nourishment. Look for a combination of greens, I like some peppery arugula, watercress and sweet spring greens mix. Pair it with sweet pears, pomegranate, nutty wanuts and a cheesy vegan tahini sauce. It’s such a simple and delicious salad I promise you’ll love it. Add some protein and make it a complete meal.

Apple Walnut Salad with Greens and Cheesy Tahini Sauce

Ingredients

  • 5-7 oz baby organic spring greens mix
  • large handful of organic arugula
  • 1 small bunch watercress, look for one with roots (Wholefoods has them)
  • 1 Bosc pear, thinly sliced
  • 1 cup pomegranate arils
  • 1/2 cup walnut shaved and some left whole, lightly roasted
  • Tahini Sauce
  • 1/4 cup smooth organic tahini
  • 2 tablespoons nutritional yeast
  • 2 tablespoons white balsamic vinegar
  • 2-3 tablespoons lemon juice
  • 1 large clove garlic, chopped
  • sea salt and cracked pepper to taste
  • ΒΌ cup warm water or more as needed

Instructions

  1. whisk all the ingredients of the tahini sauce. Add a tablespoon or more of warm water if you need to thin it out. But remember it shouldn’t be thin like a vinaigrette.
  2. Place the greens neatly on a large plate. Next place the sliced pears and sprinkle the nuts and pomegranate arils.
  3. Drizzle the sauce as needed and mix. Divide between 3-4 bowls and serve.
