Strawberry Cheesecake Overnight Oats with Chia

A simple make-ahead breakfast. Make this overnight oats which tastes like cheesecake but made with healthy strawberry chia jam + lemon, maple syrup, chia, oats, and strawberries.

Ingredients
  

  • 1 cup frozen strawberries
  • 2 tbsp chia seeds
  • 1 cup rolled oats, gluten free, organic preferably
  • 2 cups almond, oat or other plant milk organic preferably, Calcium fortified
  • 1 tbsp pure maple syrup
  • ¼ tsp vanilla extract
  • small pinch of sea salt
  • 1 tbsp lemon juice
  • 2 tbsp plain unsweetened plant yogurt
  • 2 tbsp sliced or chopped almonds optional

Instructions
 

  • In a small pan add the frozen strawberries, maple, chia seeds, lemon juice and salt. Cook for 5-10 minutes until the berries are defrosted and start to release their juice. As the chia seeds absorb the juice the berries will begin to thicken like jam. Take it off the heat and mash the strawberries with a fork, and let sit to cool slightly, it will further thicken.
  • n a medium bowl, combine the oats, milk and vanilla.Seal the container, and let it sit overnight in the fridge.
  • The next morning, top with yogurt, strawberry chia jam, fresh strawberries and other desired toppings, and enjoy!
