Peanut dipping Sauce

Ingredients
  

  • 1 cup quality peanut butter smooth or chunky
  • 2 small garlic cloves minced
  • 2 tbsp red Thai curry paste
  • 2 tsp sugar, coconut preferably
  • ¾ cup light coconut milk
  • 1 tbsp fish sauce or soy sauce or ½ teaspoon sea salt
  • 2 tbsp lime juice or rice vinegar
  • water as needed to thin out

Instructions
 

  • Place the coconut milk and all the ingredients except for lime juice or vinegar in a saucepan over medium low heat.
  • Stir to combine and simmer for 4-5 minutes, stirring every now and then. Adjust the consistency with water – it should be a pourable but a thick sauce.
  • Stir in the lime juice well. Serve!

Notes

Make the sauce to suit your taste by adjusting any ingredient.
