  • Small food processor like a coffee grinder

Ingredients
  

  • 2 tbsp coriander seeds dhaniya beej
  • 2 tsp roasted cumin seeds zeera
  • 10-12 whole green cardamom hari elaichi
  • 1 tsp fennel seeds saunf
  • 1 tsp black peppercorn kali mirch
  • 6 whole cloves laung
  • 2 large bay leaves tej patha
  • 2-3 whole black cardamom
  • 3 whole star anise badiyan or chaakri pool
  • 1 whole mace javatri
  • ½ tsp ground nutmeg jaiphal

Instructions
 

  • Combine all the spices in a small food processor or spice grinder. Pulse and grind to a fairly fine ground texture. Transfer to an airtight container and keep in a cool dark place or refrigerator.
