Berry Breakfast Popsciles

Equipment

  • Popscile molds
  • food processor or blender

Ingredients
  

  • 1-1½ cups mixed berries
  • 2 cups Greek yogurt, full fat preferably
  • 2 medium bananas, sliced and frozen previously
  • ¼ cup milk, regular or plant based as needed
  • ½ tsp vanilla extract
  • 1-1½ cups granola you can use as much as you like
  • 1-2 tbsp honey or maple syrup (optional) frozen bananas are sweet so I didn't add any

Instructions
 

  • In a blender, combine the greek yogurt, vanilla, sweeteners(optional) and frozen sliced banana. Blend until a thick smoothie purée forms. You may need to add a little milk to help the blender move, its optional though.
  • Chop strawberries if using and mix the berries, you don't need to chop blueberries and raspberries. Idea is to get them all to similar size.
  • Add about 2-4 tbsp berries in the bottom of the popsicle molds, top it with the yogurt-banana blend about 3/4 ways full. Top it with 2-4 tbsp of granola. Cover and freeze overnight or at least 4 hours until fully set.
  • To serve- remove from the freezer for at least 10 minutes before serving. If its hard to get them out, run it under warm tap water for a few seconds. Enjoy!!
