Berry Breakfast Popsicles

Berry Breakfast Popsicles are the perfect treat to cool off with on a hot day, even breakfast. Made with fresh berries, frozen bananas, Greek yogurt, granola and a touch of vanilla. Simple, delicious and nutritious.

It’s nearly mid July and that means we’re official deep into summer. Temperatures are 90° F+, there are days our A/C kicks in at 8 a.m, so it’s just appropriate to enjoy a frozen breakfasts don’t you think. I could just hear my kids jump with excitement!!! These Berry Popsicles really hit the spot when you want something sweet and cold even for breakfast. 

Ingredients Needed to Make Berry Popsicles

  • Frozen Bananas
  • Mixed Berries
  • Greek Yogurt
  • Granola
  • Vanilla bean paste or vanilla extract
  • Cinnamon (optional)

Ingredient Highlights and Substitutions

Berries – a mix of berries is what I used in this recipe for color, texture and variety. You don’t have to go out and buy all of them, even using one kinda berry will work.

Bananas– Peel, slice and freeze bananas before making these pops. I buy a few and leave them to ripen on the kitchen counter to a point where they’re soft with plenty of blackened spots. Frozen bananas are super sweet naturally, once blended the high level of pectin creates a smooth soft ice cream like texture with minimum ice crystals.

Yogurt– creamy Greek yogurt brings in a smooth texture and rich flavor. Best to use full fat for that perfect frozen yogurt/ice cream texture.

Sweeteners – There is no need for added sweeteners. Bananas and berries are enough. Feel free to add honey, maple syrup or sugar for added sweetness if desired, since the sweetness levels vary from one to another, be sure to taste before freezing and adjust as needed.

How to Make Berry Pops

To make the popsicles, start by blending together Greek yogurt, sliced frozen bananas, (maple syrup or honey if using, remember it’s optional) and vanilla. Chop the strawberries to similar size as the other berries using. Place some berries in the bottom (top once you unmold it). Pour the banana-yogurt mixture evenly into your popsicle molds. Next, add the granola. Insert popsicles sticks and then put them in the freezer. They’ll need to freeze for at least 4 hours or best overnight.

Equipment

  • Popscile molds
  • food processor or blender

Ingredients
  

  • 1-1½ cups mixed berries
  • 2 cups Greek yogurt, full fat preferably
  • 2 medium bananas, sliced and frozen previously
  • ¼ cup milk, regular or plant based as needed
  • ½ tsp vanilla extract
  • 1-1½ cups granola you can use as much as you like
  • 1-2 tbsp honey or maple syrup (optional) frozen bananas are sweet so I didn't add any

Instructions
 

  • In a blender, combine the greek yogurt, vanilla, sweeteners(optional) and frozen sliced banana. Blend until a thick smoothie purée forms. You may need to add a little milk to help the blender move, its optional though.
  • Chop strawberries if using and mix the berries, you don't need to chop blueberries and raspberries. Idea is to get them all to similar size.
  • Add about 2-4 tbsp berries in the bottom of the popsicle molds, top it with the yogurt-banana blend about 3/4 ways full. Top it with 2-4 tbsp of granola. Cover and freeze overnight or at least 4 hours until fully set.
  • To serve- remove from the freezer for at least 10 minutes before serving. If its hard to get them out, run it under warm tap water for a few seconds. Enjoy!!
