Breakfast Carrot Cookies

What I love about these cookies is they are super healthy, taste like carrot cake well almost). These wholesome cookies are perfect for on the go breakfast. I like to make a batch over the weekend and have them handy for busy mornings specially when you have no time for breakfast. Make them for afternoon snack when one tends to reach out for cookies or chips. They are loaded with heart healthy oats, flax, cinnamon and not to mention and very filling. I lie to have 1-2 with my green smoothie.

Ingredients

  • Makes about 10-12 (3 inch cookies)
  • 1/2 cup wholegrain spelt flour
  • 1 cup rolled oats
  • 1/2 cup flax seeds ground to a flour like consistency
  • 1 tsp Chinese five spice powder or cinnamon
  • 1/2 cup dried cranberries
  • 1 cup organic apple sauce homemade or store-bought
  • 1 tsp baking powder
  • 1/2 cup coarsely chopped walnuts
  • 2 tablespoons coconut oil melted
  • 1 cup grated carrots about 2
  • Zest of 1 medium organic lemon + juice of half a lemon
  • (1/4 maple syrup + 1 drop organic stevia liquid) or 1-2 tablespoons extra maple syrup

Grate and chop the carrots and walnuts. Preheat the oven to 375F
Line a large baking tray with parchment paper.
In a mixing bowl add the dry ingredients: oats, spelt flour, flax, walnuts, spices, cranberries, lemon zest, baking powder and mix.
Add all the wet ingredients one by one: maple, oil, grated carrots, apple sauce lemon juice. Mix well.
Scoop about 2 tablespoons and place it on the baking tray. Drop batter evenly leaving an inch between the cookies. Should be a about 3 inch diameter.
Bake for 18-20 minutes till they start to brown on top. Cool before eating. Keep refrigerated.
