Gajar Halwa Latte

GAJAR HALWA ka DOODH

It is almost end of February and the winter continues here in N.Calfornia. The trees have early spring blossoms on them, which is very deceiving but the rain and wind has been nonstop keeping the temperatures very low. Hopefully things change and spring arrives soon. In the meantime I’m enjoying my winter drinks everyday. This latte is very autumnish and feels really cozy when served hot or warm.

It has been a little over 6 months I kicked my coffee addiction and have replaced it with wellness lattes for my 3o clock binge. I’ve experimented with different combination and I have a few that are on the repeat every week. They are so good I will be sharing them with you over the next few days. So subscribe or bookmark on Instagram. This latte is delicious warm or chilled, it’s packed with spices which will remind you of a carrot cake or carrot halwa.

INGREDIENTS

Makes about 3 cups

  • 2-3 small organic carrots, scrubbed and diced, about a cup
  • 2 cups any plant milk, hot to almost boiling temp
  • ¼ cup boiling water or more, as needed to thin out
  • 1 pitted Medjool date
  • ¼ cup walnuts
  • ½ teaspoon lemon juice
  • 1 ½ teaspoon ground cinnamon, plus more for the top
  • 2 inch piece ginger, chopped
  • 1/2 teaspoon ground cardamom
  • 1/2 traspoon vanilla extract
  • ¼ teaspoon saffron, optional, but really good.
  • In a high speed blender, combine the carrot, hot plant milk, date, saffron, lemon juice, walnut, cinnamon, ginger, cardamom, salt, and boiling water.
  • Start at the lowest setting and as the ingredients blend bring the speed of the blender up to high. Please be careful while working with hot liquids.
  • Blend for a full minute or more until you have a creamy and smooth consistency. Enjoy immediately. You can reheat it in the microwave if you prefer it hotter.
