Spiced Okra Oven Fries

Okra is a hugely popular veggie in India and the sub continent. It’s prepared in 100s of different ways. One of my favorite is okra fries, but not deep fried. Try these oven fried method and you’ll not go back to deep fry.

Most people don’t eat okra because of the bad experience one had eating the slimy goopy okra. Bit this is going to change everything. These morsels of spiced oven fries will be your new favorite way to eat okra.

When buying okra look for non bruised, bright green pods, they should be fresh crisp and easy to snap. Wash them whole then pat dry with a paper towel and leave them to dry so no moisture is on the pods.


INGREDIENTS

  • 1 pound okra
  • 1 teaspoon ginger, grated
  • 1 tablespoons besan (chickpea flour)
  • 1 teaspoon ground cayenne
  • 1 teaspoon salt
  • 1/2 teaspoon Chaat masala or amchur powder
  • 1 tablespoon any neutral oil 
  • 1 teaspoon ground cumin
  • 1/4 teaspoon turmeric 

    INSTRUCTIONS
  1. Preheat the oven to 375 F.
  2. Wash and pat dry okra thoroughly. Remove tops with a paring knife, and split down the middle vertically to expose flesh and seeds on the inside.
  3. Rub the oil and ginger into okra gently. Set aside.
  4. In the meantime combine besan, cayenne, salt, Pepper, amchur or Chaat masala, and ground cumin. Sprinkle the mixture over okra, and toss to coat evenly.
  5. place the okra on a baking sheet and into the oven. Bake for 25-30 minutes till golden and crispy. Serve.
  6. Alternatively you can leave the okra whole and grill them.
