Olive Rosemary Biscotti

With Christmas fast approaching, I’m expecting a house full of family and friends. Having lots of good wholesome snacks to munch on is always a good idea to keep everyone satisfied while the dinner simmers away.. These crackers are very flavorful, festive, savory and go really well will red wine, cocktails and even festive drinks like mulled wine, glogg and eggnog.

Try these Italian style crackers with any dip or simply by itself with a thin drizzle of really good quality olive oil. You can also use it as a base for bruschetta with chopped tomatoes, garlic or sautéed mushrooms and a little cheese. Pack them in pretty wrapping paper for a thoughtful gift with a bottle of good olive oil and red wine to share with friends or family as a christmas gift. I know I would love to receive one

Ingredients 
11/2 cups sliced olives, I like kalmata olives
2 cups good quality all purpose flour, organic preferred
2 tablespoons fresh chopped rosemary
2 teaspoons baking powder
1/2 teaspoon flaky  sea salt
2 large eggs
3/4 cup grated parmesan or pecorino or mixed
1/2 cup plant milk or as needed.

Preheat the oven to 325F. Prepare a loaf pan by lightly greasing it with olive oil.
In a large bowl add all the dry ingredients and combine. Add the eggs and
milk and mix very well. 
Place the dough in the pan and press gently to spread evenly. Cook
for about 30 minutest till lightly golden on top.
 Once cooked, take it out of the oven and leave it to cool. 
Using a sharp serrated knife slice thin slices about 2-2.5 mm and place
the slices on a baking tray thats lined with a nonstick paper or mat. 
Bake for about 20 minutes till the slices are toasty, crisp and golden around the edges. 
Cool on a wire rack and serve. store in an airtight container.
