Homemade Mexican Grill Seasoning

I love to make my own seasoning mix and spice blends, this is our favorite taco seasoning. The Smokey spiciness of this recipe packed with Mexican flavors will elevate any meal. I use it to season and grill  vegetables, seafood, tofu, potatoes, cauliflower, fish, poultry and everything in between. Store bought seasoning are fine to keep in the pantry, infact some are really good, however, I prefer making my own blends for a few reasons. One, you can control the amount of salt, most commercial brands have salt as the first ingredient that mask the flavors not to mention enough to raise blood pressure. 2. The flavors are not as intense as I like them to be, again the salt takes over. 3 who knows how long they have been sitting on those store shelves. Homemade tastes way better and fresher.  Here’s how.

Mexican seasoning
1 teaspoon chipotle powder or cayenne pepper or any hot chilli powder (use less if you prefer mild
2 tablespoon ancho chili powder
1 tablespoon sweet smoked paprika
1 teaspoon brown sugar
1 tablespoon onion powder
1 tablespoon garlic powder
3/4 teaspoon freshly ground black pepper
1 tablespoon dried Mexican oregano preferred or regular oregano
1 teaspoon ground cumin
1 teaspoon Himalayan pink or sea salt
Mix all the spices. Store in an airtight container and use over vegetables, potatoes and meats. Use about 1-1 1/2 tablespoon for every pound of protein or vegetables. Mix with 1-2 tablespoons of oil and lemon juice to coat over everything and grill as needed.
