Double Chocolate Mousse Tart (Raw and Vegan )

There’s not much to say about this dessert. The title says it all. All I will tell you it’s 100% delicious, decandant, luscious and every adjective that describes that sentiment in-between.

Food is meant to nourish the body, satiate hunger while enjoying great flavors with all of your senses. My philosophy moderation, portion control, 80% healthy 20% treats

As you have seen on my blog, my dessert are made with 100% plant based ingredients, wholesome natural sweeteners, healthy plant fats and no artificial additives, so you can enjoy a sweet treat without putting crappy unhealthy ingredients in your body.

Quiet often I see desserts use the term guiltfree. I believe one should never eat with guilt. Food is meant to nourish the body, satiate hunger while enjoying great flavors with all of your senses. My philosophy moderation, portion control, 80% healthy 20% treats ,  regardless of what diet you choose. My dessert recipes are made with clean ingredients, definitely not calorie free, not to be eaten with abandon either.

Enough lecture let’s eat cake!

INGREDIENTS

  • 3/4 cup raw or activated (soaked in water overnight) hazelnuts or ground hazelnuts
  • 1/2 cup ground oats lightly roasted to take the raw flavor out without browning
  • 4 soft plump mejdool dates, pitted and mashed
  • 1 teaspoon pure vanilla extract
  • 1 Tablespoon coconut oil, melted
  • Pinch salt
    FOR THE FILLING
  • 2 large hass avocados pitted, scooped and diced
  • 1 small strong espresso shot or 1 tsp espresso powder
  • 3/4 cup cashew nuts, soaked overnight in clean water
  • 3-4 tablespoons or more….pure maple syrup ( 3 was enough for me, my family liked it a little sweeter)
  • 4 oz medium firm organic tofu ( trust me you won’t taste it, it’s for body and soomthness)
  • 1 tsp pure vanilla extract
  • 4 tablespoons raw cacao powder
  • Pinch of salt
  • Garnish
  • 1.5-2 cups of dark berries (blueberries, blackberries, dark bing cherries), strawberries work well too
  • 2 oz, 70% or more dark chocolate for drizzling
  • 2-3 pieces of dark chocolate shaved

Start by pulsing the hazelnuts till crumbly. Add rest of the ingredients and blend till you have a soft dough. Turn it on to a 6 inch springform cake tin and press firmly into the base.

Refrigerate for an hour. Meanwhile pulse and blend all the ingredients for the filling till smooth and silky. Pour on to the base of your cake. Even out smoothly. refrigrate till firm.

Melt the pieces of dark chocolate in the microwave for 2-3 minutes till melted and pourable. Drizzle with a spoon over the cake. Put it back in the fridge for a hour till chilled.

Garnish with berries and chocolate shavings.

Enjoy. Makes about 8 servings
