Pomegranate Almond Butter Toast

A perfect autumn/winter toast, this is a short and sweet little recipe to delight your midweek morning slump. It’s slightly sweet, spicy, nutty, crunchy basically this recipe speaks for itself in the first bite. It is that GOOD. Juicy tart pomegranate arils(banana is optional), hot honey, toasted almonds and creamy almond butter all come together in under 3 minutes of prep time. Yes please. Other than toasting the bread this recipe requires no cooking and is ready in minutes. It’s super filling and a good balance of all three macros. one of my favorite breakfast to whip up!

Ingredients for the Pomegranate Almond Butter Toast

  • Whole Grain seedy Bread or Good quality bread of your choice
  • Almond butter, or any nut or seed butter. You can also choose ricotta, Greek or Icelandic yogurt
  • ¼ cup fresh Pomegranate arils
  • ½ medium banana, sliced (optional)
  • 2 tbsp Sliced toasted almonds
  • Store bought hot honey(homemade recipe follows

Ingredients
  

  • 2 slices wholegrain bread
  • 2 tbsp almond butter
  • 1 tbsp toasted sliced almond
  • ¼ cup fresh pomegranate arils
  • ½ medium banana sliced
  • 1-2 tbsp hot honey

Instructions
 

  • On a skillet on medium-high heat, toast the bread until it is lightly golden, about two minutes. Alternatively toast in a toaster to the goldenness of your choice.
  • Mix together the honey, hot sauce and apple cider vinegar to make a hot honey. Taste and adjust as you prefer.
  • Spread a layer of almond butter on the toast. Top with thin slices of banana, pomegranate arils, sliced toasted almonds and thin drizzle with the hot honey. Add salt and pepper to taste if you prefer, but it doesn’t need it. Enjoy!
