Blueberry Cottage Cheese Toast

A perfect summer toast, this is a short and sweet little recipe to delight your midweek morning slump. Its slightly sweet, spicy, creamy, crunchy basically this recipe speaks for itself in the first bite. It is that GOOD. Juicy summer blueberries, hot honey, crunchy pistachio and creamy cottage cheese all come together in under 3 minutes of prep time. Yes please. Other than toasting the bread this recipe requires no cooking and is ready in minutes. It’s super filling and a good balance of all three macros. one of my favorite breakfast to whip up!

What you will need

  • Whole Grain Bread or bread of your choice
  • Fresh Blueberries
  • Cottage Cheese, I like this brand with added benefits of probiotics slightly mashed or blended
  • Chopped pistachio or nuts of your choice
  • Hot honey, recipe follows

Blueberry Toast with Cottage Cheese and Hot Honey

Equipment

  • Skillet or toaster

Ingredients
  

  • 2 slices whole grain bread or bread of your choice
  • ½ cup fresh blueberries
  • ¼-½ cup cottage cheese, use regular or low fat
  • ¼ cup chopped pistachio toasted
  • 2 tbsp hot honey

Hot Honey

  • 2 tbsp honey
  • up to 1 tsp hot sauce like Franks hot sauce or sriracha
  • few drops of apple cider vinegar

Instructions
 

  • On a skillet on medium-high heat, toast the bread until it is lightly golden, about two minutes. Alternatively toast in a toaster to the goldenness of your choice.
  • Mix together the honey, hot sauce and apple cider vinegar to make a hot honey. Taste and adjust as you prefer.
  • Spread a thick layer of cottage cheese on the toast. Top liberally with the blueberries, pistachio and drizzle with the hot honey.
  • Add salt and pepper to taste if you prefer, but it doesn’t need it. Enjoy!
