What is Pear Vinaigrette
This pear vinaigrette is a tasty sweet, creamy acidic dressing for all your winter produce. We use two forms of pears, fresh fruit slices and pear vinegar. Its more of a dressing than a vinaigrette, it has a smooth creamy texture that works with all your favorite winter greens just as well as roast chicken, salmon and roast vegetables. It is creamy, smooth, sweet, light and a little acidic.
To make this dressing, I prefer to blend the fruit and other ingredients in a small food processor to achieve the smooth final result. Pair it with winter chicories for a beautiful contrast of flavors and textures. Or serve table side for roast vegetables or meat.


Finding pear vinegar may be a little tricky, its not your typical vinegar available in every grocery store. Some well stocked grocery stores have them, but if it’s hard to get your hands on one, online is always a good source.



Pear Vinaigrette
- ½ pear, cored and chopped
- ⅓ cup creme fraiche
- 2 tbsp pear vinegar or lemon juice
- 1 tbsp dijon mustard
- 1 tsp honey
- ½ tsp sea salt
- ½ tsp black pepper
Blend all the ingredients into a creamy dressing. Taste and adjust the salt, pepper, vinegar if needed.
