Brazilian Inspired Feijoada Salad

Firstly let me get this out of the way…. This is not an authentic Feijoada or feijoada salad. Feijoada is a bean and meat stew eaten in some form all over the Portuguese diaspora. In Brazil it’s black beans and different cuts of porks and other meats.

However this is a vegetarian/vegan salad. It has elements of Brazilian/ Portuguese cuisine, like black beams, black eyed peas, hearts of palm, importantly it’s delicious!! It can easily be made into a full on meal by adding grilled meats if you have to. I loved it as is!

Brazilian Feijoada Salad

INGREDIENTS
1-1/2 cups freshly cooked or frozen black eyed peas (about 16 ounces)
1-1/2 cups freshly cooked or canned black beans
1/2 cup sliced green olives
1 medium red onion diced
1 red pepper, diced
1 avocado cut into small cubes
1 cup diced hearts of palm
2 medium sized tomatoes or a handful of cherry tomatoes, cubed
2-3 green onions grilled (optional)
1/4 cup chopped cilantro
1/4 cup chopped parsley

Salad Dressing
Juice of 1 lime
2 tablespoons olive oil
2 tablespoons white wine vinegar
1/2 teaspoon cumin
Salt and pepper to taste
For added protein and to make it a full meal you could add grilled chicken/ grilled steak/ shrimps/ 2 hard boiled eggs halved / or a small can of sustainable low salt albacore tuna in water

Instructions

  1. If you are using dried beans, soak over night. Then cook till tender but not mushy or use canned beans, drained and well rinsed.
  2. Add all the ingredients in a large bowl. Toss well.
  3. In  a small bowl make the dressing by blending in the e.v olive oil, vinegar, lime juice, ground cumin, salt and pepper
  4. Pour over the salad and adjust seasoning and mix very well.
  5. Serve as is or with grilled meats or other proteins!
