Rainbow Salad with Strawberry-Tahini sauce

Here is lovely salad that is fresh and vibrant with colorful fruit and veggies. I love to add a few fruits to my salad, it adds sweetness and an unexpected surprise.

You can really use any combination of produce, just make the salad dressing. It’s slightly sweet from the strawberries, creamy, vinegary and delicious. Take it to your next summer bbq or pool party and l get ready for complements.

A couple of rules I like to work with;

  • Make sure you have a few fruits to give some sweetness and flavor.
  • Go for rainbow color, this not only provides you with lots of varied nutrients, but also makes it look beautiful.
  • Use any combination of fruit and veggies for maximum flavors and textures.
  • This recipe is a basic guide. Use any number and however much you like

Here’s what you will need

  • 2 cups shredded red cabbage
  • 2 cups shredded green cabbage
  • Handful of heirloom baby tomatoes
  • 1 Persian cucumber, thinly sliced
  • Handful of small radishes sliced or 1-2 medium chioggio radishes
  • 1 mango cheeks or any summer tree fruit like peach/ nectarine/ plum/apricots sliced
  • Handful of greens like baby spinach/ baby kale/ baby field greens or watercress
  • 1-2 cups mixed berries and cherries

For dressing

  • 2 tablespoons sesame paste/ tahini
  • 4 tablespoons white balsamic vinegar
  • 1 cup hulled and washed strawberries about 4-5 small to medium
  • 2 tablespoon cold pressed extra virgin olive oil
  • 1 small clove garlic
  • Salt and pepper to taste
  • 1-3 tablespoons water

Prepare all the ingredients. Place them in a serving bowl.
To make the dressing; place all the ingredients in a small food processor and blend till smooth and creamy. Taste and adjust as needed.
Right before eating pour over the salad. Mix and serve promptly.
