Berry Chia Parfait

This easy make ahead breakfast parfait is perfect on warm summer mornings. It nutritious not overly sweet and well balanced. My kids particularly love it because it’s fruity, sweet and taste like dessert. And I know they’re getting a healthy start before they head out.

Details

There are 5 layers to this parfait, you probably have most of them at home. The one component you need to make is the chia layer which is easy. The first 3 layers can be assembled ahead of time and refrigerated, the remaining two just before serving. If you like your granola crunchy I recommend adding it just before serving. Here’ what you’ll need.

  • Greek Yogurt: any fat percent you like, it dosen’t make a huge difference.
  • Frozen berries: choose any frozen berry or fruit. Frozen mango, peaches cherries are delicious, unsweetened apple sauce is also a good choice.
  • Chia pudding: recipe follows.
  • Granola: homemade or store bought.
  • Fresh Fruit: choose fresh berries, any chopped fruit, seasonal preferbably.

Equipment

  • Jars or Glasses

Ingredients
  

Chia Pudding

  • 2 cups milk, dairy free or regular any fat percentage you likw
  • ½ cup chia seeds
  • 1 tsp vanilla extract
  • 1 tsp honey, maple syrup, optional I didn't use any

Granola

  • 1 cup granola, use more or less homemade or store bought

Frozen Berries

  • 1-1½ cups frozen berries or fruit of your choice, apple sauce is also delicious. slightly defrosted

Yogurt

  • 1-1½ cups greek yogurt or regular any fat pecentage

Fruit

  • 2 cups fresh berries or chopped seasonal fruit

Instructions
 

  • Add the chia seeds, milk, sweetener(if using), and vanilla to a bowl or jar and stir together. Let sit for 10 minutes, then stir again once the seeds have started to gel. 
  • Cover the bowl or jar and place in the refrigerator for at least one hour. Chia pudding can also be made overnight for breakfast the next morning.

Assemble

  • Whisk the yogurt. Add about ¼ cup of yogurt at the bottom of the jar.
  • Follow it by slightly defrosted frozen berries or other fruit like mango, peaches even unsweetened apple sauce is good. The next layer is ¼ cup or more chia pudding, next ¼ cup granola and finally ¼ cup fresh fruit.
  • The recipe is pretty freestyle and forgiving use as little or as much of any layer you like. ENJOY!!!
