Watermelon Feta Cucumber Peach Salad with Shallot Lemon Vinaigrette. Sweet watermelon, peppery arugula, creamy feta, flavorful peaches and crisp cucumber are all combined to create this refreshing summer salad that’s easy to create, pretty to look at, and so so delicious. Finish this simple salad with a shallot spiked lemon vinaigrette for a light yet satisfying meal or pair it with some protein for some heft. Every bite is full of sweet watermelon, crunchy cucumbers, peppery arugula and salty feta cheese. It’s summertime on a plate. And I know you’ll love it.

This is the time of the year you want to make use of the abundance of the amazing choice of produce, its hard to keep up with the array of varieties of stone fruits, melons, tomatoes, summer squashes, podded beans , peppers. This summer I’m sharing my favorite recipes, the kind of recipes I know will be quick and simple for us all to enjoy!

One of my favorite viniagrette is the shallot lemon vinaigrette, its zesty with little shallot crunch and pairs with so many salads/ produce. I know many people including my husband who thinks watermelon is perfect in itself why mess it by adding a salad dressing to it, I get it, but as a food blogger I love to create new ways to using ingredients. It may fail most times, but when it works its wonderful. I think on this occasion it works amazingly.

When it comes to summer produce, there is no wrong combination. I’ve focus on some key elements. Since there is an endless amount of fresh produce that is in season you can really get creative. I like to mix and match various fruits and vegetables to give the salad a variety of texture and flavor. Many of my summer salads use cucumber for a nice refreshing crunchy texture. I like to use chopped up stone fruit for some sweetness and mint or basil for a cool lingering effect to finish off the bite. As for a cheese I love Feta, perfect for almost every summer salad. Finally to bring everything together I opt for a simple vinaigrette.

Watermelon Feta Salad with Peaches

Ingredients
  

  • 1 small seedless watermelon, balled or diced
  • 2 medium ripe peaches, diced or sliced
  • 4-6 oz feta block, cubed
  • handful of arugula
  • 3 Persian cucumbers, sliced
  • small bunch mint, leaves only

Shallot Vinaigrette

  • 2 tbsp red wine vinegar
  • 1 clove garlic, grated
  • 2-3 tbsp chopped shallot about 1 medium
  • 2 tbsp lemon juice
  • salt and black pepper
  • 3-4 tbsp olive oil

Instructions
 

  • Combine the ingredients for the vinaigrette. Toss it with the prepared watermelon. Transfer to a fridge and allow it to marinate for at least 1 hour, up to 2 hours.
  • Bring it out of the fridge and add the cucumber, sliced peaches, cubed feta, mint and gently toss to combine. Transfer to a serving platter, just before serving combine the arugula lightly, season with salt, pepper and extra mint if desired.
