Vegan Blueberry Muffin Overnight Oatmeal

This breakfast is 100% conducive to a rushed morning. It starts the previous night so mornings you grab-n-go. Just mix all ingredients, preferably in a mason jar if you want it to go or in a small bowl if you’re having breakfast at home.

I love experimenting with different combinations, add-ins, faking desserts for my morning oatmeal. Much like my Quinoa Halwa with caramelized banana, that totally mimics the fabulous Indian dessert, combination of different spices, caramelized banana, a true treat that can be a nutritious breakfast..

Let me preface by saying this is no where like a blueberry muffin if you’re looking for that cakey texture, however to get that “muffin” experience in these oats, this recipe has it all: sweet, creamy blueberry rich. I make it by soaking the oats overnight in oat milk, vanilla, frozen blueberries, ground flax, vanilla and little almond extract. This gives it a rich cake like mouthfeel, the next morning you top it with almond or other nut or seed butter, banana slices, more fresh blueberries, some yogurt and if more sweetness is desired a thin drizzle of maple syrup.

It truly has a luxurious muffin like mouth feel, yet nutritious to eat as a power breakfast. This overnight oatmeal really lend the “dessert for breakfast”experience. Which is how I wish to start every day!

Ingredients
  

  • 1 cup organic rolled oats gluten free preferably
  • 2 cups unsweetened Almond milk or other plant milk
  • ½-¾ cup frozen blueberries
  • 2 tbsps ground organic flaxseeds
  • ½ tsp vanilla extract
  • 1 tbsp pure organic maple syrup
  • ⅛ tsp almond extract, optional

Garnish

  • 1 tbsp almond butter or other nut or seed butter
  • ⅔ cup plain vegan or regular yogurt
  • ¼ cup fresh blueberries
  • 2 tbsp chopped almonds, optional
  • 1 medium banana sliced

Instructions
 

  • In a medium bowl, combine the oats, milk, frozen blueberries(no need to thaw), maple syrup, ground flaxseeds, vanilla extract and almond extract if using. Stir to mix well.
  • Cover or seal the container(if using mason jar), and allow it to soak in the fridge overnight.
  • The next morning garnish with desired toppings recommended and enjoy!
