Mango Jicama Salsa

I was almost not going to share this recipe, but every time I make it everyone asks for the recipe over and over again. So I decide to finally post it. The salsa is simple to make and incredibly tasty. Its fresh, crunchy a little sweet, a little juicy, herby, zesty, and a little heat. It hits all the flavor notes and that what makes it so tasty and of course healthy.

If you’re not familiar with Jicama try it once and you’ll be hooked. Think of it as an unsweetened pear, it has similar texture but has no sweetness like fruit. Its very low in calories and makes an ideal salad veggie. Its versatile like cucumber and goes with so many cuisines. We like to snack on it chilled and just like they eat in Mexico with a little chili powder and lime juice, an ideal way to chomp on them. Hope you’ll give it a try. Enjoy!

Mango Jicama Salsa

INGREDIENTS

  • 3 ripe mangos, diced about 2 cups
  • 2 cups diced jicama, (see pictures)
  • 1/2 cup chopped red onion
  • 1/4 cup packed fresh cilantro leaves, chopped
  • 1-2 jalapeño, seeded and minced
  • 1 large lime, juiced (about 1/4 cup lime juice)
  • 1/8 to 1/4 teaspoon salt, to taste

INSTRUCTIONS

  1. In a serving bowl, combine the prepared mango, jicama, red onion, cilantro and jalapeño. Drizzle with the juice of one lime.
  2. Using a large spoon, stir the ingredients together. Season to taste with salt, and a few times so the salsa softens and the flavors mix well. For best flavor, let the salsa rest for 10 minutes before serving. Enjoy with tortilla chips or over any Mexican meal like tacos or enchiladas.
