Caramelized Allium Dip with Dill

It’s the 4th of July week! I feel like so many of us are slowly down and getting into a vacation mode. The 4th isn’t until Sunday, but many of us are either traveling or hosting a fun backyard party this week specially since last year we were in complete isolated lockdown.

We are visiting family and already made plans for a large get together so I know there will be lots of food and drinks involved. My BIL who is the designated grill master always makes the most amazing grill meats and vegetarian alike. I’m planning on bringing the sides and this allium dip to start. I came up with this recipe a few years ago accidentally while making a curry. Only to realize this dip actually exists. I was sautéing onions for a curry which normally calls for caramelizing onions. When I transferred them along with some sour cream to blend I tasted it for seasonings I totally loved the flavor and came up with this recipe. So there you go Caramelized Allium Dip with Dill. Anyway hope you give it a try because it’s really really good.

CARAMELIZED ONION DIP WITH DILL

  • 1 pound sour cream, vegan or regular
  • 1 pound shallot or a combination of onion and shallots
  • 2 cloves garlic grated or 1 teaspoon granulated garlic powder
  • 3 spring onions
  • 1 medium leek, white part only
  • 1 teaspoon kosher salt
  • 1 teaspoon dijon mustard
  • 2 tablespoons avocado or any neutral oil you use
  • 3-4 tablespoons fresh dill minced
  • 1 tablespoon fresh chives, minced
  • freshly cracked black pepper
  1. Heat a large, heavy-bottom pot over medium-high heat. Warm the olive oil and the sliced onions, shallots, leeks and salt, sauté the alliums for about 10 minutes. Drop the heat to a low and let the allium mixture cook until golden and caramelized stirring frequently for even caramelization, about 30-40 minutes. Set aside to cool to room temperature.
  2. Whisk together the sour cream, Dijon mustard, half the dill and chives (reserve the rest for garnish). Fold the caramelized onions. Season with freshly cracked black pepper to taste and garnish with the remaining herbs.
  3. Serve with the veggie crudités and /or potato chips .
