Caramelized Onion Dip

To me onion is a Goldstar ingredient which is the mother of most of my recipes irrespective of cuisine. So when I discovered this dip years ago at a party I was wowed. I mean clearly the ingredient list with the exception of a couple are out to kill you, but I see some virtue in caramelized onions and serving it with some beautiful vegetable crudités in my defense.

I’m not trying to make a low fat or lighter version of this dip, there is no point right! This is definitely an indulgence so I make it once in a while and we really look forward to enjoying it.

Caramelized Onion Dip

Ingredients
  • 5 medium sweet onions, thinly sliced, I like Maui onions here, but any white or yellow onion will work
  • 2 tablespoons olive oil
  • 1 tablespoon coconut or raw sugar (its called caramelized for a reason haha)
  • sea salt and fresh black pepper
  • 1-8 oz container cream cheese, whipped preferred
  • 1 cup, about 4 oz sour cream
  • 1/2 teaspoon garlic powder
Instructions
  1. Warm olive oil in a large skillet or frying pan over medium-low heat. Add sliced onions, salt and sugar to the pan and stir until onions begin the soften. Adding salt and/sugar releases water from the onions speeding up the caremelzation. Stir frequently for even browning. Avoid cranking up the heat, patience is required for slow even caramelization. It will take anywhere for 20-40 minutes.
  2. Take the onions off the heat and cool completely.
  3. In a medium sized bowl mix together cream cheese, sour cream salt if needed and black pepper. Using a fork or whisk blend until smooth. Finally stir in onions, save a few for garnish.
  4. Serve with crackers and fresh veggies crudités.
  5. Stays fresh up to 4-5 days.
