Chipotle Cauliflower Tacos with Lime Crema

The combination of spicy roasted chipotle cauliflower, smashed avocado, crunchy slaw and cooling lime crema is quiet exquisite. If you want to take a break from the tradItional chicken, seafood or meat tacos these vegan tacos will check all the boxes you expect from a traditional taco. These tacos can be made totally vegan with cauliflower and tofu or if you need to cater to mixed diets chicken also works well . These tacos are meaty, zesty and have a nice mouth feel even without the chicken. The marinade for the tacos is hot, so if you want to take the heat level a few notches down I recommend reducing the amounts of chipotle, start with ½ chipotle and gradual add more as needed. If you don’t have cashew yogurt, greek yogurt works really well.

The best way in my opinion to serve tacos is to lay everything out like an assembly line and everyone builds their own tacos–more fun.

Chipotle Cauliflower and Chicken Tacos with Smashed Avocado & Lime Crema SERVES 4
  • 1 head cauliflower about 1 lb, broken into florets
  • (OPTIONAL) 14 oz block organic firm tofu or 1 lb chicken tenders
  • 10-12 street style corn or flour tortilla
  • 1 cup cilantro , chopped
  • 2-3 cups thinly sliced purple cabbage
  • 1 cup pickled onions
  • 2-3 hass avocados
  • sea salt and cracked black pepper
  • MARINADE
  • 1-7 ½ oz can chipotle in adobo sauce
  • 1-2 tablespoons maple syrup
  • 2-3 cloves minced garlic
  • ¼ cup extra virgin olive oil
  • LIME CREMA
  • ½ cup cashew yogurt or regular greek yogurt
  • 1-2 tablespoons vegan mayo, optional
  • 3 tablespoons lime juice
  • sea salt and cracked pepper as needed
INSTRUCTIONS
  • Pre heat the oven to 450 °F. Spray two baking sheets with oil.
  • Place the tofu or chicken and cauliflower florets in two separate bowls.
  • In a small food processor blend all the ingredients for the marinade. Divide the marinade and coat the cauliflower and protein. The cauliflower takes more of the marinade but you can eye ball it.
  • Place the cauliflower tray in the oven and 10 minutes later the chicken or tofu can go in. Cook for a total of 25-30 minutes till the cauliflower are charred around the edges and chicken is fully cooked.
  • While they cook prepare the rest. In a small bowl mix the ingredients for the lime creme and set aside
  • Smash the avocado and season with salt and pepper.
  • Once the cauliflower and protein is done.
  • Transfer trim on to a plate and serve.
  • To build tacos. Fill the warmed tacos with a smear of smashed avocados, chipotle cauliflower-tofu or chicken, shredded cabbage, pickled onions, a little cilantro and drizzle of lime crema. ENJOY!
