Baked Brie with Pomegranate and Nuts

I have to admit baked cheese is not one of the healthiest snack to eat, but the year infact the decade is ending and we all need a bit of decadence in our lives. Baked cheese is definitely up there. Combining nuts, jam pomegranate or any dried fruit takes this appetizer over the top. Make sure you have plenty of crackers, crudites to scoop up the gooey cheese .

Baked Brie is a crowd pleasing appetizer for a dinner party or even a small gathering.

PROTIPS FOR SUCESSFUL APPETIZER

  • Buy a good quality Brie wheel, grocery stores now have great quality cheese.
  • Make sure you use a small cast iron skillet or oven proof dish. this will keep the oozing cheese contained and prevent messing.
  • Baked cheese can be simply served with crackers or part of a larger cheese and appetizer board with crudités, crackers and other dips.
  • The topping mixture can be a combination of anything you like. any good fruit jam, maple syrup or honey works well. Choose any combination of nuts. For fruit dried fruit works well as does pomegranates.
  • Allow the baked brie to rest for a few minutes before serving.

INGREDIENTS

  • 2-3 tablespoons fig jam or orange marmalade or maple syrup or honey
  • ½ cup pomegranate arils
  • ¼ shelled pistachios, roughly chopped
  • ½ cup walnut, roughly chopped in halves and quarters
  • Whole round French brie, about 12-15 oz

DIRECTIONS

  1. Preheat the oven to 375 °F. 
  2. Warm the jam in a microwave-safe dish for a few seconds so it thins out and easy to spread.
  3. In a small bowl, combine half the jam, pomegranate and the nuts, mix well to coat the nut mixture.
  4. Place the round of brie in a small oven-safe dish or better still a cast iron skillet. Spread the jam all over the brie with the remainder of the jam. Then top the brie with the pom and nut mixture.
  5. Place the skillet in the oven and bake for 10-12 minutes till brie has softened.
  6. Remove from oven and let brie sit for 5 minutes. Serve warm with your favorite crackers and veggie crudités.
