Balela Chickpea Salad

A tasty and very healthy Mediterranean style chickpeas salad with a little extra kick. This salad makes a good choice for a lunch on the go! it will keep you full, satisfied and packed with nutrients and fiber so you feel good about eating it. Here is the recipe.
Balela Chickpeas Salad
  • 1 can organic chickpeas and 1 can black beans rinsed and drained very well & patted dry
  • 1 cup baby tomatoes
  • 1 cup diced cucumber
  • 1 cup washed and chopped parsley+ cilantro mix
  • 1/2 small red onion chopped or 3 spring onions

Dressing

  • Juice of 1 lemon
  • 2 cloves garlic mashed
  • 2 tbsp your best extra virgin olive oil (skip if you want it fat-free)
  • Salt and pepper to taste
  • 1/2 tsp ground cumin
  • 1/2 tsp cayenne pepper (optional)

Directions

  • Mix all the ingredients for the salad dressing and let it rest while you prepare the salad ingredients.
  • Mix the beans, veggies and herbs in a bowl and pour the salad dressing. Let it sit for about 30 mins-an hour so the flavors absorb. Mix well and enjoy!
