Apple Galette with Chai Spices

One of our favorite outings in the fall is apple and pumpkin picking. We have been picking fresh apples since my kids were little and it was there favorite activity to do after Halloween of course.

This recipe combines my favorite chai masala spices with traditional apple galette or tart. Warm spices like ginger, cardamom, cinnamon, all spices, nutmeg and cloves are grounding and perfectly cozy as the weather cools. Sweetened lightly with maple syrup this galette is a must make for the season. If you’re vegan I’ve listed vegan substitutes, additionally I’ve tested it vegan as well and the subs work very well.


CHAI SPICED APPLE GALETTE 

about 6-8 servings

  • 200 g about 2 cups organic all purpose spelt flour 
  • 1 tablespoon organic brown sugar or coconut sugar
  • 1 1/2 lbs organic apples, red and golden, I used a combination of gala and golden delicious 
  • 100 g cold vegan butter or solidified coconut oil, chopped (save a tablespoon for topping)
  • 1 tablespoon ground flax or 1 organic egg
  • a pinch of sea salt
  • ¼ cup almond sliced, optional
  • CHAI SPICED MAPLE MIX
  • 1 teaspoon ground cinnamon 
  • ½ teaspoon ground cardamom 
  • ¼ teaspoon all spice
  • ¼ teaspoon ground ginger
  • ¼ teaspoon freshly grated nutmeg
  • ¼ teaspoon ground cloves
  • 1 pinch sea salt
  • 3 tablespoons maple syrup (my apples were very sweet, use more if needed)
  1. FOR THE DOUGH mix flour, brown sugar, and salt. Add the cold butter OR coconut oil and mix quickly to a crumble. Add the egg and quickly knead everything together to get a smooth dough. Cover the dough and put it in the fridge for 30 minutes.
  2. Meanwhile, preheat the oven to 375˚F. Set the rack in the middle.
  3. Mix the spices and maple syrup in a small sauce pan, warm but don’t bring it to a boil. It just needs to be melted. set aside.
  4. For THE FILLING core the apples and thinly slice the apples, if you’re not baking right away, sprinkle the slices with lemon juice to prevent browning.
  5. Roll out the cold dough to a rectangle about 13*17 inches. Neatly arrange the slices on the dough. Leaving about an inch around the edges.
  6. Fold in the edge one or two times to create a border, Sprinkle the almond slices, and then drizzle the spiced syrup and chopped butter all over the apples.
  7. Bake the galette on the middle rack for about 30 – 35 minutes until the dough is crispy and brown. Best enjoyed while still warm as is or a la mode.
