Badam Adrak Quinoa Ladoo

I always pack a healthy snack when I travel, and these bliss balls travel really well, meaning don’t squish in my purse. Full of protein, crunchy nuts n seeds and crispy quinoa make these balls fun to eat while providing a healthy dose of wholesome nutrients.

QUINOA ALMOND LADDU WITH GINGER

  • 6-10 fresh soft dates, pitted depending on the size and the sweetness desired 
  • ½ cup nut or seed butter, I used tahini because that’s all I had, it does make it a little stronger than nut butter though
  • 1½ tbsps fresh ginger, grated, use less if you don’t like strong ginger flavor
  • 1- 1/2 cup puffed quinoa, or any puffed whole grain: amaranth, barley, buckwheat, millet, bajra 
  • a handful sliced almonds, raw or toasted
  • 2 tbsp cold-pressed coconut oil
  • a small pinch sea salt flakes, optional
  • Melt coconut oil, mash the pitted dates with a fork or in a food processor.
  • Mix together the mashed dates with the nut or seed butter and freshly grated ginger. Alternatively to achieve a smooth consistency place ginger, dates, nut butter, coconut oil, sea salt in a small food processor and process into a smooth paste.
  • Gently mix the paste with the puffed quinoa, sliced almonds so the ingredients are evenly distributed.
  • Roll about one tablespoon of the mixture into small balls.
  • Keep the Laddus/bliss balls in the fridge if you plan on eating them within a few days or store the bliss balls in the freezer, they last for months, thaw before eating.
  • MAKES ABOUT 20/ one inch sized laddus/ bliss balls.
