Years ago on a trip to Berlin, overnight oats featured everyday on the breakfast buffet, the locals would eat bowls of this delicious porridge and needless to say I got hooked. When I got back I learnt the recipe for refrigerated overnight porridge and it was a hit in our family. This porridge goes one step further, it gave me a whole new way of using buckwheat other than in savory dishes that I usually use it for. I love buckwheat groats and soaking them like here aids in optimum utilization of the nutrients in the grain.<\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2015\/03\/Diptic-1.jpg\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft  wp-image-1117\" src=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2015\/03\/Diptic-1.jpg?resize=439%2C439\" alt=\"Diptic (1)\" width=\"439\" height=\"439\" \/><\/a><\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2015\/03\/DSC_3060.jpg\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"  wp-image-1089 alignleft\" src=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2015\/03\/DSC_3060-685x1024.jpg?resize=182%2C272\" alt=\"DSC_3060\" width=\"182\" height=\"272\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Raw Buckwheat Porridge with Walnuts and Seasonal Fruits<\/strong><\/p>\n<p><strong><br \/>\nServes 4<\/strong><\/p>\n<ul>\n<li><em>1 cup mango\/ papaya\/ berries\/ stone fruit like peach, apricots \/ fall fruit like apples or pear cored\u00a0( about 2-3 stone or fall fruits if you choose them )<\/em><\/li>\n<li><em>1 cup plant milk + more as needed<\/em><\/li>\n<li><em>1 cup raw hulled light-colored buckwheat groats \u00a0rinsed<\/em><\/li>\n<li><em>2-3 tablespoons \u00a0raw walnuts\u00a0<em>+ water for soaking<\/em><\/em><\/li>\n<li><em>1\/2 tsp ground cardamom or cinnamon or skip if you prefer mild<\/em><\/li>\n<li><em>1\/2 tsp vanilla extract\u00a0<\/em><\/li>\n<\/ul>\n<p><em>Toppings<\/em><\/p>\n<ul>\n<li><em>Chopped nuts<\/em><\/li>\n<li><em>Pomegranate arils<\/em><\/li>\n<li><em>goji\/ chia\/ sunflower seeds\/ bee pollen<\/em><\/li>\n<li><em>nut butters<\/em><\/li>\n<li><em>cacao nibs<\/em><\/li>\n<\/ul>\n<p>Rinse the buckwheat groats, drain and place in a bowl with walnuts covered with nut or plant milk. Next morning place it in a food processor along with fruit pulp spices and vanilla. Blitz to a smooth puree. You may need to add more milk or water to thin out. Pour into clean to go jars.
