Its also called Arroz Verde that translates to green rice. I make this quiet often when I&#8217;m short of time and have no time for making a separate veggie. we eat it mostly with beans.<\/p>\n<p>Its a simple dish made with cilantro, garlic, olive oil that gives it the bright green color and flavor. I also add some broccoli or spinach for extra green and nutrition. &nbsp;On this occasion its spinach.<\/p>\n<h3>Ingredients<\/h3>\n<ul>\n<li>1-1\/2 cups white or brown basmati rice<\/li>\n<li>1 cup cilantro tightly packed<\/li>\n<li>&nbsp;1 cup organic spinach packed, optional<\/li>\n<li>2 fat cloves garlic<\/li>\n<li>2-3 tablespoons olive oil<\/li>\n<li>1 small onion<\/li>\n<li>2-1\/2 cups water or stock<\/li>\n<li>sea salt and pepper as needed<\/li>\n<\/ul>\n<p>Wash and soak the rice for 30 minutes.<\/p>\n<p>In the meanwhile, in a small processor puree the garlic, onion, cilantro, olive oil and spinach if using. Add a little stock if needed to move the leaves.<\/p>\n<p>Bring the water or stock to a boil and cook the rice as normal. Add the green puree about half way through the cooking process.
