This is the Mediterranean\/ middle eastern style that goes really well with my Mediterranean chickpea salad. The other recipe is more Indian\/ Pakistani style that I like to serve with Indian inspired salad and condiments. Recipe for that will be for another day. In the meanwhile enjoy this spread. It\u2019s great for a summer outdoor entertainment or a weekend meal.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2018\/05\/358193EF-19A7-49C1-9595-2972E211D63B.jpeg\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-4528 aligncenter\" src=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2018\/05\/358193EF-19A7-49C1-9595-2972E211D63B-680x1024.jpeg?resize=680%2C1024\" alt=\"\" width=\"680\" height=\"1024\"><\/a><\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2018\/05\/D9FFD84E-9577-409E-96D7-38F282CBBE41.jpeg\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-4526 aligncenter\" src=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2018\/05\/D9FFD84E-9577-409E-96D7-38F282CBBE41-680x1024.jpeg?resize=680%2C1024\" alt=\"\" width=\"680\" height=\"1024\"><\/a><\/p>\n<h3>INGREDIENTS<\/h3>\n<ul>\n<li>1 lb ground lean organic turkey or chicken ( I like pasture raised, hormone free poultry)<\/li>\n<li>1 medium yellow onion, quartered<\/li>\n<li>3 fat cloves of garlic<\/li>\n<li>1 whole bunch, about 2 cups, &nbsp;parsley, stems removed washed and roughly chopped<\/li>\n<li>1\/2 teaspoon ground cardamom<\/li>\n<li>1 teaspoon smoked paprika<\/li>\n<li>1\/2 teaspoon sumac<\/li>\n<li>1\/2 teaspoon hot cayenne pepper<\/li>\n<li>1\/2 teaspoon all spice<\/li>\n<li>Salt and pepper<\/li>\n<li>Pita bread and <a href=\"http:\/\/www.nutrilious.com\/?p=4512\">salad<\/a> to serve<\/li>\n<\/ul>\n<ol>\n<li>In a small food processor, chop the onion, garlic, and parsley, fine chop not pur\u00e9ed.<\/li>\n<li>Add the ground turkey or chicken and the spices. Run the processor until all is well combined.<\/li>\n<li>Remove the meat mixture from the food processor and place in a large bowl. Ant let it marinate for a couple hours in the fridge preferably.<\/li>\n<li>Take a fistful portion of the meat mixture and mold it on a wooden skewer, spread it along the skewer into a kebab shape. Repeat the process until you have all of it on skewers. make sure each sheesh kebab is about 1 inch in thickness.<\/li>\n<li>Lightly grease the grill pan and preheat it to medium. I prefer cooking these kebabs indoors, but you could cook it on a barbecue gas grill too. Preheat the bbq grill for 20 minutes before you place the skewers on it.<\/li>\n<li>Prepare the the fixings. If you plan to, make the tahini sauce<\/li>\n<li>Lay the skewered kofta kebabs on a tray lined with parchment paper<\/li>\n<li>Place the kebabs on the lightly greased grill pan or pre heated gas grill.
