This is by far one of our favorite Sunday brunches. I like it with scrambled tofu but it\u2019s fabulous with a couple of poached or fried eggs. It\u2019s best made with summer tomatoes but if it\u2019s off season add a small pinch of sugar to balance the flavors of the tomatoes. It\u2019s a very simple and easy recipe, most of the ingredients are store bought. If you prefer you can make your own pico de Gallo and refried Beans. I prefer to use a good quality smashed beans and make my own salsa.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2018\/03\/B8DB01DE-F2FF-473A-8E4C-A09E54FDAEF1.jpeg\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft size-large wp-image-4304\" src=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2018\/03\/B8DB01DE-F2FF-473A-8E4C-A09E54FDAEF1-680x1024.jpeg?resize=680%2C1024\" alt=\"\" width=\"680\" height=\"1024\" \/><\/a><\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2018\/03\/56F5989B-95BE-472C-95D4-1F96ABB2241F.jpeg\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft size-large wp-image-4299\" src=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2018\/03\/56F5989B-95BE-472C-95D4-1F96ABB2241F-680x1024.jpeg?resize=680%2C1024\" alt=\"\" width=\"680\" height=\"1024\" \/><\/a><\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2018\/03\/A2B450B6-1F85-4D00-B4EA-882DEB60F472.jpeg\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-4301 aligncenter\" src=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2018\/03\/A2B450B6-1F85-4D00-B4EA-882DEB60F472-680x1024.jpeg?resize=680%2C1024\" alt=\"\" width=\"680\" height=\"1024\" \/><\/a><\/p>\n<p>Heres How<\/p>\n<p><b><u>Tofu Scramble<\/u><\/b><\/p>\n<p>1 block\/ about 10-12 oz\/ about 2 cups, always organic- firm or extra firm regular or sprouted tofu<br \/>\n1 medium onion finely chopped<br \/>\n1\/2 tsp turmeric<br \/>\n1 tsp ground cumin<br \/>\n1\/4 tsp or more ground cayenne hot pepper or 1\/2 deseeded jalape\u00f1o<br \/>\n1-2 tbsps olive oil<br \/>\nseasalt and black pepper to taste<\/p>\n<p>In a pan warm oil and add chopped onions to soften on medium heat. When soft add crumbled tofu. Cook stirring \u00a0till the tofu is slightly browned. Add turmeric, cumin, and cayenne. Stir and mix well. Cook further for another 2-3 minutes. Check on seasoning and take it off the heat.<\/p>\n<p><b><u>Pico de Gallo<\/u><\/b><\/p>\n<p>2 beefsteak tomatoes or 2 cups cherry tomatoes, chopped<br \/>\n\u00bd red or white onion, finely chopped<br \/>\n\u00bd cup cilantro leaves, roughly chopped<br \/>\n1 small jalape\u00f1o minced<br \/>\nJuice from 1\/2 lime<br \/>\nPinch flaked sea salt<\/p>\n<p>Mix the finely chopped tomatoes, red onion, cilantro, jalape\u00f1o and sea salt in a bowl and set aside.<\/p>\n<ul>\n<li>4-5 Whole-wheat Tortillas<\/li>\n<li>6 pasture raised eggs, cook as you prefer poached\/ fried for extra protein or in place of tofu<\/li>\n<li>1 can organic fat free refried pinto beans<\/li>\n<li>1 lime cut into wedges<\/li>\n<li>1 avocado sliced<\/li>\n<li>hot sauce<\/li>\n<\/ul>\n<p><b><u>To Assemble<\/u><\/b><\/p>\n<p>Warm the refried Beans, so its melted and spreadable you may have to add a little water. Set aside. Warm the tortilla on a hot griddle on both sides. Place the warm tortilla on a flat surface and spread 1-2 tablespoons of refried beans, top it with salsa, tofu scramble, a squeeze of lime juice and a few avocado slices.
