I call it my chicken.<\/p>\n<p>What I love about cauliflower is its a blank canvas and takes on any flavor you give it making it very versatile to experiment with fun spices. It&#8217;s meaty with good sturdy texture and lends to a variety of recipes that call for fish, cheese, chicken. Thus it&#8217;s popularity in tacos, pasta Chinese dishes etc.<\/p>\n<p>In my opinion roasting is the best way to eat cauliflower.<\/p>\n<p>I used cheddar colored cauliflower for its naturally creamy color. If you have a hard time finding this color use white and add a pinch of turmeric.<\/p>\n<p>So here we go&#8230;..<\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2017\/09\/IMG_8510.jpg\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft size-large wp-image-3892\" src=\"https:\/\/i0.wp.com\/www.nutrilious.com\/wp-content\/uploads\/2017\/09\/IMG_8510-683x1024.jpg?resize=683%2C1024\" alt=\"\" width=\"683\" height=\"1024\" srcset=\"https:\/\/i0.wp.com\/www.nourishdeliciously.com\/wp-content\/uploads\/2017\/09\/IMG_8510.jpg?resize=683%2C1024&amp;ssl=1 683w, https:\/\/i0.wp.com\/www.nourishdeliciously.com\/wp-content\/uploads\/2017\/09\/IMG_8510.jpg?resize=200%2C300&amp;ssl=1 200w, https:\/\/i0.wp.com\/www.nourishdeliciously.com\/wp-content\/uploads\/2017\/09\/IMG_8510.jpg?resize=768%2C1151&amp;ssl=1 768w, https:\/\/i0.wp.com\/www.nourishdeliciously.com\/wp-content\/uploads\/2017\/09\/IMG_8510.jpg?w=2000 2000w\" sizes=\"auto, (max-width: 683px) 100vw, 683px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p><b><u>Roasted cheddar colored Cauliflower soup<\/u><\/b><\/p>\n<ul>\n<li>One large cheddar colored or white cauliflower cored\u2014cut into 3\/4-1 -inch florets, and a few coarsely chopped<\/li>\n<li>1-2 tablespoons extra-virgin olive oil<\/li>\n<li>Salt and freshly ground black pepper<\/li>\n<li>1-\/2 teaspoon coriander seeds<\/li>\n<li>1 whole green cardamom<\/li>\n<li>1\/2 teaspoon ground turmeric optional if you are using white cauliflower<\/li>\n<li>1\/4 teaspoon cayenne<\/li>\n<li>1 medium onion, sliced<\/li>\n<li>4 cups vegetable stock, preferably homemade<\/li>\n<li>1\/2 cup toasted sliced almonds<\/li>\n<li>1\/4 cup chopped herbs<\/li>\n<\/ul>\n<ol>\n<li>Preheat the oven to 400\u00b0. In a medium baking dish, toss the cauliflower florets and almonds with 1\/2 tablespoon of the olive oil. Season with salt and black pepper, roast on the top shelf of the oven for about 20 minutes, until tender but not browned.<\/li>\n<li>Once the cauliflower is done take it off the heat and let it rest. In the meanwhile heat oil a sauce pan. Add the chopped onion and saut\u00e9 for for 4-5 minutes till they are soft.<\/li>\n<li>Add the spices and saut\u00e9 till fragrant. 1-2 minutes. Add the cauliflower (save a few smaller pieces for garnish) and broth and bring it to a boil. Cook till cauliflower is done.<\/li>\n<li>Transfer the soup and the almonds (save a few for garnish into a blender carefully or use a hand held blender and blitz till smooth and silky.
